The 12 Days of Christmas are filled with many bird references and December has no shortage of bird activity. Wild fowl and hares hang in Britian’s butcher stalls and roast pheasant is traditional table fare for Christmas dinner. Chef Hank Shaw, who’s appeared at Pheasant Fest, recommends hanging pheasants before plucking and roasting. On December 3, Fort Robinson is serving a historical Christmas dinner and the fort will be lit until the New Year. While Boxing Day pheasant shoots continue to bring family and friends together, side hunts are a thing of the past. Yet, the Christmas Bird Count carries the friendly and competitive spirit of Christmas past, seeing who can tally the most birds in one day.
